So two weeks ago, right before my emotional breakdown— right before the weekend, I was feeling pretty good. And hopeful. And thinking our family deserved a little fun getaway. I booked hotels, bought tickets and got a house sitter ready. The next day, the day before our little getaway, I woke up with another random fever. I was bummed to say the least. But we packed our bags, threw a clueless kid in the car, and headed north to Disney. It was pretty exciting to pull up and see the look of surprise and happiness on her face. It was undeniably a bit tough feeling so ill— but we absolutely did everything we could to try to make the best of it. Despite my health and the often pouring rain (very typical of Orlando) we had a pretty good time. I always tell myself we’ll do more quick, spur of the moment trips like this— but we rarely do them. It feels good to try to do them now.

While Disney seems to be adding a lot more vegan options, my diet is obviously more restricted than that– so what did we do? Well, the night before Alex amazingly cooked off piles and piles of vegetables and tempeh for me and boiled a bunch of buckwheat noodles– then made a ginger miso sauce. We packed it all into a cooler and were the weirdos with a cooler in the hotel room. But hey, I was fed! I lived off this messy meal + cold oatmeal for three days and was not bummed.

We definitely ruined her birthday a bit  (in the best way) since we had planned to do this for her birthday. But we’re not mad. It was worth it. We have no idea what we’ll be doing this year for her birthday– even though it’s two and a half weeks, but like always, I’m sure we’ll figure it out. I hope we can have more of these weekends sometime soon. It’s been a hell of a year for all of us— we all deserve a bit of together easy, fun time.

I hope you guys all had a great week. Ours was rocky with more of the preschool germs. Surprisingly, I’ve actually been the only one who has fought them off this week. But luckily it seems like everyone is getting over their germs. And Alex has a bit of time off this week so we’re staying hopeful and looking forward to a good weekend and good week. I hope you guys have one too. <3 Happy friday!

My hubby and I got engaged at the Animal Kingdom Lodge- in our room and celebrated with a bottle of wine on the balcony overlooking the savanna, after a lovely dinner at Sanaa (the bread service… omgggggg). Needless to say, we love it there. That and Animal Kingdom are two of our very favorite spots in WDW. Hopefully one day soon you can enjoy a Bloody Mary from the Dawa Bar in Africa while listening to the Burduka band (pictured in one of your photos above)-truly a great way to spend a Sunday morning.

  3. Disney looks much nicer and greener than I imagined, lovely. Glad you managed to have a good time there despite not feeling great. You've reminded me how much I love tempeh, must cook some soon. I do hope you all have a fab weekend together. CJ xx
