Today on A Vegan Kitchen we have the sweet vegan mama, Katy and her two girls. They’re twins, they’re two years old, they’re adorable, and one of their all time favorite (easy peasy) lunches is black bean and hummus quesadillas. “without the queso, of course. It’s a really great combination because the hummus holds it together & adds some creaminess so you don’t miss the cheese at all! It’s also really really easy & quick to throw together.” 
Bean purees within a quesadilla is one of our staple lunch time meals here as well (in fact we did it for lunch AND dinner here yesterday). AND it helps answer one of the all time most asked vegan questions “where do you get your protein?” Bam, here’s one delicious way 🙂

Hummus Black Bean Quesadillas

-Whole Wheat Tortillas
-Hummus:
1 Can of chickpeas (reserve water from can)
1-2 Garlic cloves
3 Tbsp Lemon juice
2 1/2 Tbsp Tahini
1 tsp salt
1/4 tsp paprika
Mix everything except the reserved juice from the can in a food processor. Blend until smooth. Add a small amount of the reserved water until it’s your desired consistency.
*To make this an even quicker recipe you can buy hummus, but we love this recipe & it’s really simple to throw together.
-Black beans:
1 Can of black beans, rinsed & drained
1/2 can of corn, drained (or fresh or frozen corn equivalent, cooked)
1/4 tsp garlic salt
1/4 tsp onion powder
pinch of cumin
salt & pepper to taste
Mix all ingredients.
How to:
Heat a frying pan over medium low heat & spray with cooking spray. Place a tortilla in the pan & cover with a generous amount of hummus. Spoon a layer of the bean/corn mixture on top of the hummus. (Tip: For toddlers you can kind of mash the bean mixture down to make it stick better. It’s much less messy!) Spread a layer of hummus on a second tortilla & place it face down on top of the layer of beans. Cook a few minutes on each side or until slightly browned. The mixture is usually enough for 4 quesadillas.
