Hello friends! Coming back at-cha with another easy, yummy, and vegan recipe. This one isn’t exactly ‘for your health’, but it is a great morning, afternoon, or evening treat that will put a smile on everyones face. Let’s sugar now… and detox later. K?
Dry Ingredients:
-3 cups flour: all purpose is great, but if you have self-rising, then why not use that πŸ™‚
-1 tablespoon baking powder (and maybe a pinch for good luck, thats what I always do anyway.)
-1 teaspoon baking soda
-1/2 cup sugar
-8 tablespoons vegan butter (we like love earth balance.)
-vegan chocolate chips— I use about 3/4 of a bag… and save the rest for craving days, but you can use as much or as little as you’d like. I buy the whole foods brand, its convenient because it’s very clearly labeled. Be cautious when buying other brandsΒ and carefully read the ingredients.Β I know some of the other brands I once bought, now contain milk fat. No bueno. (Jerks)
Wet Ingredients:
-1 to 1 1/4 cups milk of your choice (I typically use almond because it’s what I have on hand, soy or most others would be great too)
-1 tablespoon apple cider vinegar*
-2 teaspoons vanilla extract

*You can skip the vinegar step, if you’d like, it’s not completely necessary. The vinegar creates more of a “buttermilk” taste/consistency when added to the recipe, so while it’s not needed, I do recommend it πŸ™‚

To make:Β 
-preheat oven to 400 degrees
-place all dry ingredients (except chocolate chips) into a large bowl
-mix well, you want to have everything very nicely blended together.
-add chucks/slices of butter into dry ingredients bowl. with your hands, begin mixing butter into flour mixture. be sure to break it up pretty well. you want to get out all large chunks, so it appears the butter was never added. don’t be lazy, make sure you mill the ingredients together very well.
-pour milk into a separate bowl.
-add apple cider vinegar, mix, andΒ let stand for about two minutes.
-don’t get grossed out as the milk curdles (mmm yummy).
-add vanilla extract to wet bowl, mix.
-slowly begin pouring milk into your large flour bowl and blend. your dough will be sticky and wet. try to find a good balance without making it too soggy and unmanageable and too dry. Somewhere between 1 and 1 1/4 cups should be great, but if you think you need to add more (or not use all of it), go with the feeling. don’t over think it, it’s just scones.
-add chocolate chips.
-on a floured surface, knead dough for two minutes. again, don’t be lazy– just focus, and give your dough some love.
-flatten dough into a one and half inch thick circle on a floured baking sheet (or on parchment paper if you have a cooking stone).
-slice into triangles
bake for about 25 minutes, or until scones are golden and the inside is cooked and flaky.
let cool for a minute, rip apart, share with friends (or don’t), chow down, and enjoy!
**As we all know, I’m more of a savory girl. This scone recipe isn’t super sweet, but the chocolate chips should hit any sweet tooth… but if you’re really looking for a sweet treat, I understand— Just can add a bit more sugar πŸ˜‰

  5. I made these tonight and they were delicious! I made a couple substitutions to add protein and decrease carbs by switching out 1 cup of flour and 1/4 cup almond milk for 1 can of pureed northern white beans. Also added slivered almonds for extra crunch.

  6. I tried this with my 5 year old daughter and It was superbly delicious! My daughter dont usually eat non-chocolate flavour yummy but with this (thou its choc chip) she just chunk it down with her milk! she loves it!
