Brown food to be exact. I feel pretty good about myself knowing that even on my unhealthiest of days I am healthier than a lot of people. I eat 100% vegan (well… 99.9% if you count the honey that I almost never have). I try to eat 100% organic but this number falls more around the 95% range. And about 5% processed things. Yes, I am a little bit of a food snob, but so what 🙂 I’m proud of myself for how I’ve grown to be such a healthy eater or organic and wholesome veggies, fruits, and grains…. with that being said… we all need one of those days where we indulge in a little more brown food. Sunday was that day for me.
Breakfast: blueberry waffles topped with the chocolate coconut milk ice cream I had made a few days ago. And a glass of orange juice.
Lunch: leftover mac and ‘cheese’. This was much better fresh from the oven but still good nonetheless. The ‘cheese’ is a veggie, cashew, nutritional yeast base.
Dinner: Chickpea patty, baked sweet potato, and some roasted veggies.

1. One version topped with sirracha. My heat tolerance has gone down since being pregnant. I miss loving spicy foods.
2. Sauteed veggies in a chickpea and spice mixture formed into little patties waiting to be cooked.

I also snacked throughout the day: Blue chips and salsa, watermelon, and peanut butter sandwiches 🙂
First thing tomorrow: Juicing a ton of veggies! I need this baby to love vegetables and spices (and garlic!) as much as I do 🙂
