Diet Water

Hello friends! It’s time for another recipe on Diet Water! I originally planned to do a post on processed/boxed foods today, but honestly, I’m tired, &this is easier, & really, who doesn’t love cookies? Bad people don’t love cookies. Are you a bad person? I hope not.

I’m not going to lie, I don’t have the biggest sweet tooth… I love chocolate and cookies… and thats about it.. no cakes or pies for me… just cookies. &yes, I love to promote healthy foods and vegetable eating, but we’ve all got to indulge sometimes. So… seriously think about making yourself some vegan cookies this weekend. After dinner you snuggle up on the couch with your loved one, your children, or your dog (cats count too)…. you have a warm plate of cookies on your lap (yes, on your lap, not on the table next to your or in the kitchen… on your lap is key) & a glass of milk (organic chocolate soy milk for me please) in your hand. Perfection isn’t it? Yes.

Although cooking has never been my forte every once in a while something wonderful comes out of my experiments, as I like to call them.  Although I am not a vegan or even a vegetarian I am always on the lookout for a new treats for Meatless Mondays or to surprise the growing number of vegans and vegetarians in my life. That’s why I love keeping up with great recipes on Diet Water.
Recently my doctor informed me that I have high cholesterol, so I have been struggling to make health conscience choices.  During my search for cholesterol friendly eating, I came across some recipes and articles on eggless baking. At the time I had also been talking a lot with a friend who had recently become vegan. She told me about the benefits of wheat germ (especially the folic acid benefit for those of you thinking of becoming pregnant) and so began the great cookie experiment.
This sweet concoction is what came of the efforts.
This recipe is easy enough just a few things to pay attention to:
1. In my experience with eggless baking it is very important to follow step 3.
2. Butter choice seems to make a difference. Soy butter has worked the best for me, but I have used margarine and real butter as well.
3. Shoot for smallish sized cookies rather than large cookies.
Vegan Chocolate Chip Cookies

Ingredients:

1 cup soy butter, butter, or margarine
1 cup brown sugar
1 tsp. vanilla
1 tsp. baking soda
¼ cup boiling water
1 cup whole wheat flour
¼ cup wheat germ
½ tsp. salt
2 cups oats
1 cup semi-sweet chocolate chips
1. Preheat oven to 350 degrees.
2. Mix the soy butter (or whatever you are using), brown sugar, and vanilla together.

3. Dissolve baking soda (quickly) in boiling water. Add to mixture (very swiftly) and stir.

4. Throw in everything else.

5. Drop smallish balls of cookie dough onto a cookie sheet.

6. Bake for 11 minutes.
7. Let cool for 7 minutes before removing from cookie sheet.
8. Enjoy!

Makes about 2 dozen

note: You don’t need a mixer. You can totally do this by hand and get an arm workout too.

vegan notes: Have high cholesterol? There’s no cholesterol in a vegan diet! 🙂 
I’ve never tried or even looked at Smart Balance. I use Earth Balance and love it, but use whatever you’ve got! 
If you have a Publix supermarket by you I urge you to go and buy their organic chocolate soy milk. It’s seriously to die for. I’m not a soy drinker myself (I use almond milk for everything), but it’s friggen fantastic.

I really hate when people clap… for example: when an airplane lands, or after a movie, or whatever/whenever…. I told my mom I would not let her hold my child (her only grandchild) if she clapped during Marlowe’s birth. But Marlowe clapping? Best thing ever.

    And about the clapping… if anyone clapped at one of my births, I would be tempted to hurl something at them! lol

  3. Excited to try the cookies..maybe this weekend. I usually fail when it comes to baking cookies so hopefully these work out.
