This week has been a really fun challenge when it comes to cooking. I’m on a mission to use every single last perishable food item in my kitchen. My goal is to make yummy meals… without having to go to store to buy anything else. So far, it’s been pretty good, but I’m not sure why I didn’t document most of it. Today we (Marlowe helped) cooked up some frozen ravioli from the freezer with a homemade tomato sauce, with lots of onions, herbs, and shredded carrots (got to use up those carrots!). Oh, and I bought frozen spinach for the first time, not too long ago, because I thought it might be good to keep around and add to things… but BLEGH, not a fan. I like keeping frozen peas and corn around to put  in dishes, but I definitely won’t be buying frozen spinach again. This week we also made a broccoli, carrot, mushroom, tofu stir fry with rice noodles– that was a big hit. Tonight I’ll most likely be using the last of the potatoes for mashed potatoes, roasting the last of the carrots, and either a tofu or chickpea patty of some sort. Tomorrow I will probably be using the last of the onion and mushrooms for biscuits and gravy… then pasta night again… and some more bean quesadillas…. then who knows… maybe takeout 😉

black bean dip (black beans, lime, cumin, oil, salt, pepper pureed until smooth) with crackers.

“pork” and beans (we had a leftover veggie dog from a cookout), mashed potatoes, pea and corn couscous, and coleslaw.

and of course this. I froze up some of the extra mac and cheese in case we are in a pinch on monday, or tuesday before the flight 🙂 

Have a great weekend, everyone! It’s supposed to rain all weekend here, but thats okay because I’ll be locked inside, scrubbing down my house, packing packing packing, saying a few goodbyes, and of course: cuddling 😉 four more days!

    Are you completley moving out of your house? Putting it all in storage??
