Not sure what to call this, because I didn’t make it. But it was a yummy mushroom and spinach pasta cooked in veggie stock, earth balance, parsley, and a bit of tomato paste.
indian night: potatoes, cauliflower, tofu, and peas. 
more indian night: a samosa type filling, wrapped in phyllo dough. 
and then I thought…. what else can I wrap in phyllo dough? and then, I made heaven: junkie mock turkey, mashed potatoes, gravy and veggies, wrapped in phyllo dough. Thanksgiving to go, anyone?

cauliflower/potato mash, mushroom gravy, corn and peas, chickpea patty. (she didn’t eat the corn and peas)
coconut milk yogurt, grapes, mini waffles with honey. 
couscous, avocado, corn, tomato salsa, spanish potatoes, and an arepa. 
pizza love. 
yuca and veggie quesadilla. 
rice beans, avocado, corn peas. 
avocado toast, forever and ever. 
Welp, after a very wonderful, needed, and relaxing fat kid day (think: pasta, french toast, mashed potatoes with gravy, s’mores, etc. etc.), I’m going to bed. Hope everyone had a wonderful weekend! 


  1. all of this looks delicious! this is very inspiring to me as i have a litt done who refuses to eat meat (seriously, 18 months and won't eat meat). all these meals look and sound delicious and wholesome – you never fail to inspire me with these posts!
