I haven’t been very good at remembering to snap photos lately– maybe because meals have been more lax then usual. I eat 2x the amount of food that I used to, so I feel like I’m constantly sitting to eat and our times hardly match up– but heres a good wish mash of different foods I remembered to take photos of!

almond bread with honey (well, this was mine, I have coconut butter on mine. It has twice the fat and calories as coconut oil! She has honey) 

still her favorite— black beans (cooked with an assortment of veggies) and chickpea salad

coconut flour pancakes! Something I can eat! Sort of— I didn’t feel great after– they ma have been too rich for my gut– but look a real meal the three of us could have!

veggie pad thai. 
flat brown rice noodles and veggies and tofu with a ginger soy sauce. 

more pancakes! her and alex had a pancake date while I slept. I’m not mad. 

a bunch of chickpeas and veggies in a tomato-y broth + avocado.

avocado + cream cheese sandwich and carrots and hummus on the side. 

the messiest filled and fried spring rolls. stuffed with cooked cabbage, carrots, bell peppers, and probably something else I’m forgetting.

steel cut oats and mango. 

rutabaga + acorn squash soup with avocado. (no sauerkraut for her. This was mine).

and a smoothie and hummus, tofu, and carrot sandwich…. for breakfast… weird breakfast request, but it works!

  1. I love everything about this. What a wonderful selection of healthy foods for your little one! My little guy is vegan as well, he is 3. A bit of a picky eater, sometimes. Was delighted to see her eating an avocado cream cheese sandwich as it is one my little ones all-time favorites! Your blog is inspiring.   2. I wish I could try some of the fruit you're featuring Drea – carambola, rutabaga, starfruit…
    I've been circling around a persimmon like a bee for a while and will definitely give it a try.

  4. I love cook books but in reality I need meal plans I eat well but I have balanced diet anxiety! Any time I cook something I try and decide whether we ate that meal in the last, are we getting enough daily fibre etc. Would you consider bringing out a meal plan? Or do you have one already that I happened to miss 🙂
