I made up for another brown food weekend by having an extra share of bright colorful foods today. Isabelle came by and we walked down to the raw/vegan cafe down the street for some yummy raw pates. It’s a whole whopping 1.5 blocks away! 🙂 On the walk back it was pouring rain and we headed straight for my car to drive to the veggie market for things to juice.

I was disappointed they didn’t have any organic beets left at the market, they are one of my favorite things to juice. Hopefully next time! Even though you really cant go wrong with all the different combinations of fruits and veggies. At some point this past year I went gleaning for starfruit/carambola and arrived home with the largest bundle and made a huge batch of starfruit lemonade. It was one of the most delicious things ever. My mouth is watering just thinking of the tart deliciousness. I need to get a hold of more starfruit. I really love everything about my juicer, especially now that I have my little one living off everything I put in my body. I want her to enjoy vegetables (and spices) and much as I do!
I roasted sweet potatoes and acorn squash yesterday morning before my class and this evening I spread the sweet potato with mashed avocado on toast, it was a surprisingly good combo. I plan on looking up some ideas for the squash tomorrow. The only thing I’ve ever really done with it is soup and I may or may not have made stuffed acorn squash before? It may be some variation of a salad, or these quesadillas, or this soup. Either way, tomorrow will be an experiment of some sort.
Dinner consisted of kale, chickpeas, and pasta yumminess.
