smokey tomato, kale, and white bean soup.

for more meals… check behind the cut…

I have two guilty pleasures in life. one is nachos (guacamole not pictured)
the other is pizza bagels… or really, pizza in any form.
rice, tofu, broccoli, peas, corn.
pasta with cashew cream sauce with green beans, mushrooms, and peas.
quesadillas.
crap-tastic mock chicken, corn and broccoli, kale chips, and sweet potatoes topped with vegan marshmallows. (she didn’t go for the sweet potatoes. like me, not a fan)
probably my first and last time making polenta. Topped with a sautΓ© of chickpeas, mushrooms, onions, and greens.
tomato bread and vegetable soup
tofu noodle soup (leftovers, but here is a recipe)
mac and cheese (I want you NOW)

Welp, this may be the last ‘what marlowe eats’… at least for a fair amount of time. Unless, maybe, I start bringing out new staple recipes to our home… but I doubt it. For now, you can check back into the archives if you’re looking for a few more vegan toddler meal ideas. It’s been a good run… and I’m definitely starving now. That mac and cheese is really calling my name.

  1. we would be very sad if this is the last what Marlowe eats, I really enjoy reading about what you two are eating and using your recipes!

    • i don't use recipes for most of my stuff… just lots of veggies… lots chili seasoning, some smoked paprika and a pinch of cumin… two to three kinds of beans (I let M choose) and a bit of tomato paste to thicken it up πŸ™‚ oh and in this batch I added a tablespoon or two of mexican hot cocoa. BAM.

  2. I just started making polenta recently after reading the NY Times recipes. I topped mine with some fresh farm tomatoes choppped and sauteed, shaved Parmesan and black pepper. Yum! But I've also always been a fan of grits and they're pretty similar.

    • yeah i don't think i ever had grits until two years ago or so. I'm kind of whatever about the. I did add a bunch of nutritional yeast and vegan butter.. but i don't know.. it just didn't hit the spot. but I've had polenta fries and was IN LOVE with them.

  3. Delicious and healthy food! I need to be more creative in my meals for my kid too. πŸ˜‰

  4. Do you make your own cashew cream sauce? I can't have dairy and was thinking it may be a good alternative.

    • Yes! It depends what I use it form.. but I do a lot of different variations.. sometimes thick with lots of herbs for stuffing things… or "milky" ish with almond milk or water. sometimes if I'm feeling like a real fat kid I'll add some tofutti cream cheese and a ton of nutritional yeast… almost, kind of sort of alfredo-y.

  5. i know you are saying this is the last of the what marlowe eats posts, but don't stop with the food posts!!!!! (i actually use your 'what marlowe eats' posts to re-invent my cooking and combine things.

    • I'll still have things on toast.. and brunch days… and include food in other posts.. just maybe not a big lineup of food πŸ™‚

  6. Polenta. I made it once then had a 10+ year gap before I even looked at it again. It's good with cheese in it though, and even better when someone else makes it for you.

    • I would have it in fry form… or if someone makes it for me, like you said πŸ™‚

  7. I wish I could eat like M. Though I do think I'm going to try that mac 'n' cheese the next time I'm craving comfort food.

P.S. I enjoyed your pictures of the Fair so much that I googled when one was coming to Orlando. I went this weekend and had the worst experience of my life – haha. I'm thinking your fair in South Florida rules because this one was god awful. Everyone kept asking why on God's green earth I insisted we go after our awful day and all I kept saying was, "GUYS! I SAW A BLOG AND IT WAS AMAAAAZING, OK! I'M SORRY!" Don't worry – I'm not gonna hold it against you. πŸ˜‰

    • hahahahah. I'm sorry! I think the orlando one is different… and a lll fairs are well.. kind of dirty, ya know πŸ™‚

  8. What kind of fake cheese do you use. I have been using daiya, but it doesn't look anything like yours. Thanks

    • I know you can' tell by these photos, but we rarely eat the fake stuff around here. I typically by one block of follow your heart a month. The mozzarella variety. If I'm really craving junkie food and I don't want to make the trek to Whole Foods, I buy Daiya, cause its sold at my local publix now…. but I def. do not prefer it.
